Salmon Brain Balls
175g tinned salmon (drained weight)
3 large potatoes, cooked and mashed
2 medium eggs
2 spring onions
1 tsp finely chopped parsley
About 150ml rapeseed oil
Tomato Ketchup to serve
Mix all ingredients except the oil and ketchup together. Form into small golf ball sizes. heat oil in pan and shallow fry balls in batches. drain and serve
Salmon is a great source of Omega 3, 6 & 9 that children need for brain development and function. You also have energy from the spuds, protein and B Vitamins from the eggs and immune boosting greens of parsley and scallion. Not only nutritious and well balanced meal, but cost effective too.
A word on Ketchup:
A little goes a long way. Choose a good quality one with less sugar, salt and additives and focus on the goodness that lycopene provides from the tomatoes.
Serve with portion of stir fried veggie like carrot and courgette and a small crusty roll. Remember you are aiming to sneak in 1/2 plate full of veggies at each meal.
Tips for buying tinned fish
- check fish content.
- look for products that state Omega 3 content (0.2g/200mg per 100g total Omega 3 at a minimum)
- watch salt volume
- careful of the small bones
